Coconut Chicken Curry
Ingredients:
- 3 chicken breasts, cut into chunks
- 1 tablespoon of ghee or butter or coconut oil
- 1 can (13.5oz) coconut cream (skim from the top of a refrigerated can of coconut milk)
- 1 cup chicken broth or stock
- 2 cup diced carrots
- 1 cup chopped celery
- 2 tomatoes, diced
- 1 1/2 tablespoons curry powder or garam masala
- 1 tablespoon grated ginger
- 1/4 cup cilantro, roughly chopped
- 6 cloves garlic, minced
- salt to taste
