Ingredients:
- 2 lb. boneless, skinless chicken breasts
- Pinch salt & Pepper
- 2 Tbsp olive oil, divided
- 3 cloves garlic
- 1 (15 oz.) can petite diced tomatoes
- 1 (15 oz.) can quartered artichoke hearts
- 1 tsp dried basil
- 1 tsp lemon zest (about ½ medium lemon)
- ¼ bunch fresh parsley
- 12 oz. cooked pasta of your choice
